My friend Amanda recently posted about making eco-licious lotion, bread, yogurt and granola at home.
It all sounded delightful, so I asked if I could move in with her and her family.
I still haven’t heard back from her.
Oh well.
The good news is that I was inspired by her homemade goodness.
That, and I have NINE glorious work free days of Spring Break to fill with whatever I choose.
Day One’s goodies?
Homemade Tahini
1 cup of sesame seeds (only $0.62 from the Sacramento Natural Foods Co-op!)
1/4 cup organic sesame oil
Homemade Granola (adapted from The Kind Diet by Alicia Silverstone)
6 cups rolled oats
1/2 cup brown sugar
3/4 cup Bob’s Red Mill Flaxseed Meal
1/2 cup shredded coconut
1/2 cup sunflower seeds
1 cup raisins
1/2 cup sesame oil
1/2 cup maple syrup (B grade)
1 1/2 tsp vanilla extract
Preheat oven to 350 degrees. Bake oats for 10 minutes in a rimmed baking pan. Transfer oats to large bowl, and sugar, Bob’s, coconut, seeds and raisins. Stir to mix then add oil, syrup and vanilla. Mix until moistened.
Bake at 350 for 10 minutes. Stir after 5 minutes (although I forgot and it was just fine).
Cool in the pans and transfer into an airtight container.
We’ve already eaten some with milk and over yogurt with fruit.
Delicious!

P.S. I can’t believe you guys love Contra . . . I was disappointed by it compared to their first album. First album (Self titled) ROCKS! Maybe I just don’t get Contra??

jury is still out on contra for me (amanda loves it) – at first listen my inner grandma came out and wondered who the hell brought synthesizers back into style. i need to investigate further. btw, good to know about self-titled.
I’m going to try that granola recipe. Sounds great and I’m always looking for ways to incorporate flax seeds into food.
Regarding moving in…how’s dinner instead? Although…I’m not sure when. The only night we’re kind of available (until the end of April…April is crazy for us) is Friday.
And…love, love, love, Contra by Vampire Weekend. I’ve been listening to it almost non-stop for weeks. I need to check out there first album, too.
@amanda – granola is tasty and easy. the original called for wheat germ (which i didn’t have) so i subbed the flaxseed meal. i actually like the nutty taste.
dinner sounds great! although we may have to put it off until summer break. it sounds like we’ve all got full plates until then.
erin weighed in on contra – she thinks she may not get it, but gave the full -on thumbs up on their self-titled. jury is still out for me – you’ll all have to wait for a music round up for my thoughts!
whole wheat banana bread, miso dressing/dip, and granola are almost always in rotation at my place. i’m now also recently obsessed with kale chips.
