Oh February…. why can’t we be friends?
You seem like a good idea with your days off and quasi spring-like weather and yet, I find myself a bit grumpy and out of sorts.
Sigh.
This week I’ve been using up what is already in my refrigerator. My enthusiasm for all things new (ie new year adrenaline) is beginning to wane and I’m trying to figure out how to incorporate all these new food ideas I got from the cleanse into everyday life.
Here’s a tasty little something I put together with what was hanging out in my fridge.

Lentils with chickpeas, onion and quinoa
Ingredients
packet of steamed lentils from Trader Joe’s
1 15 oz can of chickpeas – rinsed
1 very thinly sliced onion
olive oil
garlic powder or garlic
1 tsp turmeric
1/2 tsp dried ginger
Optional:
crumbled bacon
Directions
1. Cook quinoa your preferred method.
2. Heat oil in pan and slowly cook onions until very soft.
3. Add steamed lentils, garlic, turmeric and chickpeas.
4. Heat through.
Serve over quinoa and top with crumbled bacon.

Oh! I meant to say that I love cooking with kitchen castoffs. Last night’s dinner was a Thai/Chinese fusion noodle dish: grilled marinated tofu, green onions, and spinach with white rice noodles (GF) and peanut sauce. I felt like I made magic when I came up with that. And now, there REALLY isn’t any food in the kitchen! :]
Oh…bacon! Turmeric sounds like the perfect spice for this dish. My dad never fries onions without turmeric.
I’ve actually always liked February. I love the way the trees turn into puffs of cotton candy (yes, I have seasonal allergies). November is my other favorite month, because the gingkos turn yellow. Both months are bookends to winter, gateways to change.
I agree, Tams. February = FAIL. Is this freaking month over yet? Can we skip right to April?
In a rather uncharacteristic move (and, I must say, motivated by YOU) I did some impromptu cooking yesterday, and recreated a farro salad I had at a Portland restuarant (http://www.luccapdx.com/ YUM) Friday night. Farro = delicious. Who knew?
