TGBTS Cooks: Favorite Vegan Winter Recipes

Dear Friend,

Today I’m sharing the recipes for what we’re eating this season. They are fresh, easy and packed full of vegetables.

I grew up in the convenience foods generation of the 70s. Meaning if it didn’t come from a box, bag, can or the freezer – we didn’t eat it. Even in California families were convinced that soup starters – dehydrated vegetables – from a box made more sense than a fresh onion, celery and carrots. It was a weird time for eating.

So even though we ate at home every night, I didn’t really learn how to cook real food and I wasn’t I wasn’t really excited about food.

That all changed when I was in my 20s living with a roommate who really knew his way around the kitchen. I used to sit on a stool in the corner asking questions about how this whole food from scratch thing worked.

I watched and learned and I’m so happy this fresh food thing has caught on!
In recent years I have found the process of cooking to be almost as pleasurable as actually sitting down with friends and family around the table.

We have a “mixed” family: meaning the husband is mostly a vegetarian, I am severely allergic to dairy and shellfish and we have a 4 year old. All of that is to say we don’t eat a lot of meat, never use cow milk and at least one of us is always yelling about what we’re not going to eat.Below are a few of my recent favorite plant-based recipes found in my newest cookbook:

chloe kitchenartichoke spinachWarm Spinach Artichoke Dip, anyone? Unbelievably delicious and completely dairy-free. Equally tasty with rice crackers, tortilla chips or baguette.

vegan alfredoVegan Alfredo over the pasta of your choice – no milk, no cream, no butter – NO COW. My 4 year old slurped three bowls of this pasta up on Christmas Eve.

vegan avocado pestoAvocado pesto. I think you only need one avocado, but who am I to tell you what to do?

I realize now I’m sharing all super carb-licious pasta dishes, but that’s what this girl wants to eat in the winter. I’ll share my favorite new soup recipes in a later post.

Reflection: Our First Month With Ruby

Yesterday during my day long cryfest  yoga retreat, I had some time to reflect on my first month of parenthood.

The Good:

Ruby’s laugh – honestly I’ve never hear a sound that makes me happier.

Ruby’s smile.

Her lips.

Her cheeks.

The look on her face first thing when she wakes up – like she’s been waiting for this moment her whole life.

Baby babble: mommomomomomomomom

The clapping.

Licking books.

Giving me a book over and over to read again and again {current favorites: Good Night Gorilla, The Foot Book, I Am A Bunny, and Brown Bear, Brown Bear.}

Pounding the table at meal time for MORE. NOW. PLEASE.

Her high level of enthusiasm for baths.

Pulling herself up using your pant legs and hugging our knees.

Tiny baby feet.

Her Mongolian spot.

Constantly being reminded what needs attention in this moment – sweeping under the bird-cage, turning off the electronics, closing all the drawers – mostly a cuddle with mama.

The Bad:

Worry much? Friends, I am a worrier by nature and since we’ve invited our little nugget into our house I’ve turned the worry dial up to 11 on many a nights. Holy crap – nothing is too small or too big.

The disrupted sleep. The baby sleeps great, but between the worry and the moving, kicking, flopping etc I barely get a wink.

The lack of yoga class. People, yoga at home is awesome, but the community of others? underrated when you haven’t spoken to anyone higher than your knee in a long while.

My body hurts – between the worry, the contortionist sleeping, the picking up and walking around with 17 extra pounds – mama needs a massage STAT!

The Ugly:

One more than one occasion I asked if I needed to brush my hair before I left home. {the answer is always yes. I know, I know}.

The kitchen floor under her high chair.

The front of all her clothes by mid-day. Drool much?

Diapers are disgusting. That is all.


Thank you for being there for us this first crazy month. We feel so loved and well taken care of. We’re starting to get out and about more and having visitors more regularly, so if you see us around or want to make a date – give us a shout out.

15 things for 15 years

15 years ago, on what used to be known to me as ‘Dead Elvis Day’,  I went on a date with a guy from high school.   

Today I ate lunch with him to celebrate the best 15 years of my life.   

While this blog is dedicated to figuring out how to best take care of myself while taking care of others, this guy plays a pivotal role in the taking-care-of-me madness around here. 

Here are 15 of the best things about him in no particular order.   

1. His kindness.   

I think he may have my share too.  

2. His laugh.   

When he really gets going, he almost sounds like a giddy school girl. It kills me every time.  

3. His sense of fair play.   

He will want you to know – he’s a lover, not a fighter.  

4. His very dry sense of humor.   

Quick witted and sarcastic. Never in a mean way. Just like I like him.  

5. His care-taking ability.   

So much better at this than I am.  

6. His songwriting.   

Part of the reason I got to know him in the first place.  

7. His moderation.  

Who is that consistent with self-care??? I hope this eventually rubs off on me.   

8. His word.   


9. His insight.  

It’s like he really listens and knows me.   

10. His advice. 

The best. Almost exactly what my girlfriends tell me before they tell me and he almost never reminds me that he told me first.  

11. His integrity.   

See: His word. 

12. His world view.   

Almost an exact match to mine. Smart guy. 

13. His desire to become a father.   

Heartwarming/breaking and beautiful. 

14. His patience.  

With me, seemingly endless. 

15. His heart.   


Thank you sweetheart, for helping me be a better person.

 Who has captured your heart and how have they helped you?

How honest is too honest?

I’ve done it now. I’ve invited the world inside my very personal thoughts and journey. So far, the reactions and comments have been nothing short of fully supportive. Although that could be because I stacked the deck by showing this to the other people going on the journey with me, but still, nothing but kudos and “I get where you are coming froms.”

I took a big risk this morning. I’ve invited my family into my inner world. I sent this link to my mom and dad and brother. I have a long history of keeping people I’m not sure agree with me at arm’s length. Now I’ve exposed that soft, fleshy part of my throat that is so vulnerable it brings tears to my eyes writing this.

People, please be kind. This is a very personal journey and I don’t want to feel like it was a mistake for inviting you in.
